I had to jump on the viral eggs fried in feta with chilli crips oil trend. It’s just too delicious to ignore. The feta gets golden and caramelized after being fried and adds amazing flavour to this simple breakfast. Chilli crisp is a miracle condiment and I’m finding myself spooning it on so many things.

Eggs fried in feta and chilli crisp come together in 5 minutes making it a super easy breakfast or lunch recipe. I love eggs for dinner like these eggs in puttanesca sauce so I could easily have this for supper too.

Chilli crunch can elevate a bowl of noodles, your breakfast eggs, pizza or grilled cheese to another level. I ate it with prawns in garlic which was sublime.

I use the Woolworths chilli crunch variant here, but their onion chilli crunch is also delicious and would work perfectly here.

If you don’t have chilli crunch oil, you can use any chilli oil or a few chilli flakes and dried herbs to flavour your eggs.

I am totally obsessed with this recipe and can’t wait to play around making variations of it.

What is chilli crisp:

Chili crisp oil, is a condiment originating from Chinese cuisine, adding heat and texture to various dishes. It comes from Sichuan province, China, known for its rich culinary tradition.

To make chilli crisp oil, vegetable oil and spices are heated until fragrant, creating a flavour-packed infusion. Key ingredients include dried red chilli peppers, Sichuan peppercorns, garlic, ginger, and scallions.

These are combined to balance heat, spiciness, and aroma.

The Woolies chilli crunch has a smokiness from the chipotle flakes, crunch from the sunflower seeds and a hint of sweetness. These make a magical formula of savoury sweet and crunchy.
I’m considering making my own, but in the meantime, it’s my new favourite condiment to add a huge boost of flavour.

How to make feta fried eggs in chilli crisp

Here are a few tips to help you make the perfect feta fried eggs in chilli crisp oil.

  1. Firstly, add a light spray of olive oil to the non-stick pan in the beginning. You don’t want to add too much as you will be adding oil. This light spray prevents the feta from sticking too much to the pan in the beginning.
  2. Use a non-stick frying pan to prevent the feta from sticking.
  3. Measure the amount of feta with your heart. I used only a little as I love goat’s milk feta which is much stronger than regular feta. Feta is also very salty, so I don’t like to use it too much. Make sure you use good-quality feta cheese.
  4. The same applies when adding the chilli crisp oil. Add as much as you like and as much heat as you prefer. There is quite a lot of oil in this condiment as it is a flavoured oil, so you might need to dab up any excess that pools in the pan.
  5. You can add one or two eggs to the pan. I find covering it with a lid sets the whites whilst keeping the egg yolk runny. I couldn’t imagine eating this with a hard egg, but you do what you prefer.Keep the lid on longer for firmer egg yolks.

What to serve feta fried eggs with

I have used mini flour tortillas (also available from Woolies) which I always have on hand and store in the freezer. Just fry them briefly on either side in a dry pan to brown slightly. Don’t fry these for too long as they get super crispy quickly. You can also crips these up over an open flame (briefly).

Avocado adds an amazing creamy texture to the tortilla, but you can’t eat this without it. It will just be a lot dryer. Add a spritz of lemon or lime juice to the avo to add acidity.

If you don’t have flour tortillas, you can have this on toast or avo toast too.

You can add any other toppings you like such as fresh coriander, chopped chives or spring onions, rocket, bacon, lightly pickled onions, and slices of fresh tomato.

I have switched over to eating eggs for breakfast 90% of the time. They offer a multitude of health benefits, including high-quality protein for muscle and cell function, essential vitamins and nutrients like B12 and choline for energy and brain health, and lutein/zeaxanthin for eye protection.

Most importantly they keep me full for longer and don’t give you any early-morning glucose spikes.

This quick and easy viral recipe for eggs fried in feta with chilli crisp oil is so delicious and comes together in 5 minutes.

Ingredients

  • Splash of olive oil
  • 1 mini flour tortilla
  • 1 – 2 free-range egg
  • ¼ ripe avocado
  • 2 Tbsp crumbled feta or goat milk feta or as much as you like
  • 2 – 3 tsp chilli crisp oil

Instructions

  • Heat a small skillet on medium and add the splash of olive oil. Fry the flour tortilla on both sides for about 20 seconds until just starting to brown but not crisp up too much. Set aside.

  • Mash the avocado into the tortilla and spread it around. Add a spritz of lemon juice (optional).

  • Sprinkle the feta into the skillet and add the chilli crisp. Break 1 or 2 eggs over the feta oil and cover with a lid. Cook to your preference.

  • The feta should be golden and crisp underneath the white of the egg sets.

  • Immediately remove and add it to the tortilla topped with smashed avo.

Notes

If you do not have chilli crisp or chilli crunch you can use chilli oil or a sprinkle of dried chilli flakes.

Serve on avo toast if you don’t have a tortilla.
