I have always loved snickerdoodle cookies, but when you put a gooey caramel in the middle as a little surprise, you take it to a whole new level.

Every day when we would get home from school, our mom would have an after school snack ready for us. Some days it was fruit, or vegetables, or crackers, but some days, she would have warm cookies for us.

Those were always the best days. My favorites were Snickerdoodles, but I bet these would have been my favorite if we had known about them back them.

That little touch of soft melted caramel is so yummy and so easy to add.

Our cute friend Jamielyn from I Heart Naptime just released her cookbook, The I Heart Naptime Cookbook.

I am sure that you have seen all of Jamielyn?s amazing creations on Pinterest (such as her Infamous Jell-o Cookies!) and I am always blown away by her amazing creativity and talent.

This book is loaded with over 100 recipes that can be thrown together in less than an hour (like while your children nap) and they all look and taste amazing.

These cookies definitely didn’t disappoint! They were soft and chewy – the way a snickerdoodle should be, but that gooey caramel in the middle sent them over the top.

This book is absolutely beautiful and every recipe is family-friendly – this is definitely a book you want to add to your collection.

  • Really any pre made and packaged caramel you find at the store would work for this recipe, but I prefer using Kraft caramels.
  • They are the perfect shape, and they melt nicely in these bad boys.
  • We have also made these cookies using Rolo candies and they were also delicious and super easy to press into the cookie dough.

Ingredients

  • 1 cup unsalted butter (room temperature)
  • cup sugar divided
  • cup packed light brown sugar
  • 2 eggs
  • teaspoons vanilla
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • teaspoons ground cinnamon
  • 12 soft caramels quartered

Instructions

  • Preheat the oven to 350 degrees.

  • Line two baking sheets with parchment paper.

  • In a large bowl, using a hand mixer, cream together the butter, 1 cup granulated sugar, and the brown sugar. Add the eggs and vanilla and beat until smooth.

  • In a separate bowl, whisk together the flour, salt, baking powder, baking soda, and cream of tartar. Add the flour mixture to the butter mixture and stir until smooth. Cover the dough and refrigerate for 10-15 minutes.

  • In a small bowl, mix together the remaining 1/4 cup granulated sugar and the cinnamon. Roll the dough into 1 1/2 inch balls. Make an impression in the top of each cookie with your thumb and place 2 caramel pieces in each cookie. Pinch the top closed and roll the dough into a ball around the caramel. Roll the cookies in the cinnamon-sugar mixture and place on the prepared baking sheet about 1 inch apart.

  • Bake for 10-12 minutes, or until the edges are slightly crisp. You want the centers to still be soft. Let cool on the baking sheet for 3 minutes and then transfer to a wire rack.

  • Store in an airtight container at room temperature for up to 3 days.

FAQs

Why do my snickerdoodles come out hard? ›

Snickerdoodles might turn out hard if they are overbaked or if the dough is too dry.

Why are my snickerdoodles always flat? ›

Too little flour and too much sugar are often the source of flat cookies, so measure carefully and accurately by using dry measuring spoons and cups for dry ingredients (so that you can spoon the ingredients into them and sweep away the excess) and use cups with pouring spouts for liquids.

Why are my snickerdoodles too puffy? ›

Flour. The problem with Snickerdoodles is that if you add the appropriate (minimal) amount of flour to achieve chewy cookies, they tend to flatten out in the oven, with edges that are extra crispy. If you add too much flour, the cookies will puff up more and LOOK really thick and chewy.

What is the secret to making cookies soft? ›

Baking cookies quickly in a hot oven – at 375 degrees F as opposed to a lower temperature – will make for soft results. They'll bake fast instead of sitting and drying out in the oven's hot air. Ever so slightly underbaking your cookies will give you softer results than cooking them the full amount the recipe says.

How do you soften snickerdoodle cookies? ›

Simply lay the bread at the bottom of the container and pile your cookies on top of it, seal the lid, and wait a few hours. The cookies will soak up all the moisture from the bread and by the next morning, they will taste as good as the day they came out of the oven gooey.

How do you make cookies fluffy instead of flat? ›

Try using baking powder instead of baking soda. Baking soda encourages spreading while baking powder puffs the cookies up. If your recipe calls for 1 teaspoon of baking soda, you would use 3 to 4 teaspoons of baking powder.

Why does snickerdoodle dough need to be refrigerated? ›

Refrigerating snickerdoodle dough lets the butter resolidify and prevents the cookies from flattening out in the oven. I recommend giving the dough at least 45-60 minutes of chilling time in the fridge before baking.

Why are my snickerdoodles so soft? ›

Slightly under-baking the snickerdoodles also guarantees a softer cookie. Take them out of the oven after about 10-11 minutes. This will keep the interior of the cookie soft and chewy.

Why didn't my snickerdoodles flatten out? ›

If your oven is too hot or too cold, it may influence whether or not your cookies spread properly. If you didn't preheat your oven to the correct temperature before placing your tray of cookies in the oven, it will be too cold and your cookies won't have enough time to spread.

What makes cookie soft and chewy? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

Why aren't my cookies soft? ›

Overmixing will lead to tough cookies. Preheat the oven for a precise temperature and baking time. Use more than one baking sheet, even if baking one batch at a time. A hot baking sheet will melt the dough before it goes into the oven, so start each new batch with a cool sheet.

Why did my cookies come out hard as a rock? ›

Hard cookies: you are over mixing, baking too long, baking at too high a temperature, or some combination of these. Cakey cookies: not enough brown sugar, too much or too little egg, too much flour, maybe you used baking powder instead of baking soda?

Why do my cookies get hard right after I bake them? ›

Cookies become hard when the moisture in them evaporates. This can be caused by leaving them out in the air for too long, baking them for too long, or storing them improperly.

How do you fix cookies that are too hard? ›

Microwave Method:Place the cookies on a microwave-safe plate. Microwave them on high for about 10-15 seconds. Check after 10 seconds to avoid overheating. The heat from the microwave will soften the cookies, making them more tender and easier to chew.

Why did my cookies turn out tough? ›

Overbaking: If you bake your cookies for too long, they can become dry and hard. Make sure to check your cookies frequently as they bake and remove them from the oven when they are just starting to turn golden brown around the edges.
